Flavor varies from species to species, pea or bean flavor with apple overtone, also varies from garden to garden depending on the soil.

Remove the stamen and pistil - you now have a cup that you can fill!

Remove the petal heal (the white part – it is bitter) scatter in your favorite salad mix.

Crystallize the petals and use then in an ice cream garnish.


Rose Petal Pesto

Remember that the pesto will taste like the smell of the rose, so make sure you like the smell!

Ingredients

  • 2 Garlic cloves
  • 240 ml rose petals (remove the heal – white part at the base)
  • 60 ml basil leaves
  • 60 ml Asiago cheese
  • 60 ml pine nuts
  • Olive oil
  • Salt, pepper to taste

Instructions

  • In a food processor combine the garlic, rose petals, basil, cheese and pine nuts
  • Combine until homogenous
  • Add oil slowly until desire consistency
  • Season with salt and pepper
