Salads, vegetables, rice, pasta, root is used like a vegetable tasting like parsnips with a peppery undertone, soups, stews, candied. Leaves are cooked like greens or raw, flower buds can be pickled, seeds can be used like poppy seeds.

Smoked Veggies

Ingredients • Smoked Veggies

  • 460ml hickory chips
  • Water
  • 4 Amish Paste tomatoes
  • 2 Bell peppers

Instructions • Smoked Veggies

  • In a roasting pan place the Hickory chips
  • Cover with water, let soak for 5 minutes
  • Strain
  • Form a packet with aluminum foil
  • Score the tomatoes and peppers
  • Place in foil, cover tightly, in a 450F oven for 10 minutes
  • Reduce heat to 250F, cook for another 30 minutes until slightly brown
  • Cool, peel tomatoes
  • Seed the peppers

Ingredients • Pickled Beans

  • Evening Primrose Sauce
  • Ingredients
  • 250ml red wine
  • 125g chopped shallots
  • 2ml crushed peppercorns
  • 1L demi-glace
  • 10ml Evening Primrose seeds
  • Cayenne pepper to taste
  • Salt and pepper to taste

Instructions • Pickleds Beans

  • In a sauce pan reduce by 2/3 red wine
  • Add chopped shallots, peppercorns, demi-glace and Evening Primrose seeds
  • Simmer about 20 minutes
  • Season with Cayenne pepper, salt and pepper
  • Strain

Beef Tenderloin wrapped in Maple-Roasted Bacon

Ingredients • Beef Tenderloin wrapped in Maple-Roasted Bacon

  • 2 strips of thick-cut bacon
  • 15ml of maple syrup
  • 2 x 9cm thick beef tenderloin steaks
  • Salt, pepper

Instructions • Beef Tenderloin wrapped in Maple-Roasted Bacon

  • Pre-heat oven to 400F
  • Arrange bacon on a baking rack on a sheet pan
  • Bake for 15 minutes or slightly brown
  • Remove from oven, brush maple syrup and bake for another 3minutes
  • Wrap the bacon around the beef, secure with toothpicks
  • Season to taste
  • Grill on med-high, 4 to 5 minutes per side
  • Transfer to plates
